Self\u2010raising flour <\/i><\/b><\/p>\n<p><b><i>250g\/9oz Butter<\/i><\/b><\/p>\n<p><b><i><br \/>\n<\/i><\/b><b><i>360g\/13oz. <\/i><\/b><b><i>Mixed dried fruit <\/i><\/b><\/p>\n<p><b><i>180g\/6oz. Sugar<\/i><\/b><\/p>\n<p><b><i>100ml\/3.5 fl oz. Milk<\/i><\/b><\/p>\n<p><b><i>Method:<\/i><\/b><\/p>\n<p><b><i>Preheat the oven to 190\u00b0C\/375\u00b0F. Line a medium, square cake tin.<\/i><\/b><\/p>\n<p><b><i>Rub the butter into the flour until it\u2019s the texture of fine breadcrumbs. Add the sugar and fruit and mix well. Add the milk and mix to a soft, stiff dough.<\/i><\/b><\/p>\n<p><b><i>Press into the cake tin, pushing down firmly in the corners. Score the top of the cake with a sharp knife, making criss\u2010cross diagonal lines.<\/i><\/b><\/p>\n<p><b><i>Place in the middle of the preheated oven and bake for 35\u201040 minutes, or until golden brown and a skewer inserted<\/i><\/b><b><i><br \/>\n<\/i><\/b><b><i>in the middle comes out clean.<\/i><\/b><\/p>\n<p><b><i>Remove from the oven and while<\/i><\/b><b><i><br \/>\n<\/i><\/b><b><i>still warm, brush with milk and give a generous sprinkling of granulated sugar.
